Cold Green Bean Salad
1 lb. fresh green beans, washed and cut into thirds
1 bunch of broccoli
1/4 lb sliced mushrooms
1 c. grape tomatoes, cut in half
grated carrot
red onion to taste
Italian dressing
Caso fresco cheese
Blanche the green beans and broccoli until they are tender crisp. Cool in cold water, drain completely. Add other vegetables. Toss with italian dressing and top with caso fresco cheese, salt, and pepper.
